In past months I have had a better handle on meal planning. Not so much in recent months. But, I have learned to use allrecipes when I have my game on. Here is a list of tried, true and for the most part healthy recipes. I will add as I keep cooking.
Recipe list:
Scott's Savory BBQ Sauce This has a more vinegar base, kind of tangy Carolina style, I love it but if you like sweeter, it's not for you
Chicken Breasts w/Balsamic Vinegar and Garlic I love balsamic vinegar but it may not be for everyone
Chicken Oregatano Don't let the short ingredient list fool you, this is a GREAT recipe
Fish Fillets Italiano I use salmon or a thick cut tilapia. I omit the olives and add 2 tsp. italian seasonng and 1 tsp. pizza seasoning (add pepper flakes if you like it spicy) This is a seriously good dish. Restaurant quality and so easy!
Blackened Salmon Fillets I make up a HUGE thing of this seasoning. It is very tasty on other fish as well!
Amy's Cilantro Cream Sauce When they say a "bunch" of cilantro, that means a handful. This is good everything! Tacos, burgers, fish, even scrambled eggs!
Tr-Tip This is a great recipe that got high marks when I made it. If it is not sold commercially, ask them to cut it for you. I don't think Walmart does this, but our smaller market cuts their own meat, so they did it for me. Read the recommendations. I used kosher salt and cut it in half, and I used T brown sugar. Cook fat side up with rub packed on top. I used the recommendation for oven cooking. It came out med/rare. We like it a little bloody, so Imay come back on cook time next time. But it was DE-LISH!
Slider Style Mini Burgers OK this one is not healthy, but it's kid friendly, skip the cookie sheet, it makes the bottom hard, just wrap in foil
Spicy Beef Kabobs Made this one tonight. Word of caution, I only used 1/4 tsp. of cayenne pepper and the kids STILL thought it was too hot, it was fine for the hub and me. Crank it up all the way, or skip it altogether, this is a great recipe. Hub put it in tortillas, I put it over a bed of wilted spinach with butter and garlic salt.
Simple Country Ribs These are boiled first and then put on the grill to char. We have done it with and without the grill and they are great either way. The key is boiling them in the sauce I think. Once they are done, I boil the sauce back down to make it a little thicker. You use less sauce, which is less calories. This is cut with a butter knife good eatin'!
